5 autumn recipes to pair with a bottle of wine

Dear wine lover, fall is finally here with new images, smells and flavours for us to enjoy!

Cloudy mornings with a hot cup of coffee, smooth jazz music playing in the background, calming rain sounds, misty mornings, colourful leaves on the trees, oversized hoodies and board game nights with friends. Already excited just by reading these? Well, you are officially a major fall lover!

Two things we love about Autumn are the beautiful scenery changes occurring in our vineyard and the pairing of seasonal food recipes with high quality Greek wine.

Thus, we thought to share with you 5 creative, fall recipes to pair with excellent wines by Domaine Hatzimichalis.

Let’s get started:

  1. Pork with quince, apples, chestnuts & red wine Aglianico

One of the most popular autumn foods in Greece are chestnuts. Every fall you can find chestnut themed, traditional festivals all over the country. 

So next time you cook we dare you to combine pork with chestnuts, quince and apples with the excellent red wine Aglianico by Domaine Hatzimichalis. It’s an ancient variety, very popular among the Greek settlers of Southern Italy (Magna Grecia).

After harvesting the Aglianico grapes, they patiently wait in french oak barrels for 18 months. The result? Your nose and palate will love the unique smells and flavours of sweet spices and black fruit!

2. Veal stew with pumpkin, carrots, bacon and Alfega red wine 

Our beloved pumpkin is the typical autumn food and we love it in our recipes.

Enjoy the spooky ambiance at your table with a perfectly cooked veal with a side of pumpkin, carrots, bacon, and (most importantly) Alfega Erythros. A creative recipe with an elegant red wine - certainly not a Trick, but just a Treat for your guests.

Alfega is a unique wine from 3 different, top notch grape varieties (Cabernet Sauvignon, Cabernet Franc και Merlot). This magical blend was made possible by the climate similarities between Atalanti Valley and Bordeaux, the place where this blend originates from.

Alfega red is distinguished by its flavour complexity and balance as well as by its spices, jamminess and red fruits characteristics.

3. Orzo with wild mushrooms, smoked pork, gruyere and Merlot Yataki

It is well known that the fall is the season of wild mushrooms right after the first rains. 

Try orzo with wild mushrooms, siglino (a cured, smoked pork) and gruyere and it will blow your mind. If you want the ideal wine pairing with this recipe, look no further. Our Merlot wine from our Yataki Vineyard will exceed your expectations.

4. Green salad with orange, walnuts, tuna, balsamic vinegar and Assyrtiko white wine

Now, for all those who prefer a light dinner, we’ve got you covered.

Mix in a bowl green salad with orange, walnuts, tuna, balsamic vinegar and pair it with a glass of Assyrtiko. This interesting grape variety is famous for its high acidity, minerality and freshness, as well as for its fruity notes and citrusy flavours.

5. Chicken with apples, cider and Kapnias white wine

Do you know what apples and wine have in common? Well, one of each per day keeps the doctor away. But apart from that, when cooked together with some cider the result is stunning.

Kapnias white is a great wine version of the most eloquently smokey Chardonnay. After being fermented and matured for 8 months in French oak barriques by the method of batonnage, this wine stays 12+ months in cellars.
