Wine Varieties
In order for a white wine to be classified as “Cava’’, it ages 6 months in oak barriques, followed by 6 months in the bottle. This is exact amount this wine ages with the 6 months being in Hungarian oak.
The specific, tender care with which we provide these varieties results in a beautiful, concentrated taste. No irrigation systems are used at this vineyard in order to increase concentration.

White vinification method under controlled temperature. The wine matures for 6 months in Hungarian oak barriques (228lt) and then for 6 months in the bottle, in the underground cellars of Domaine Hatzimichalis, so that it can be referred to as ‘Cava’.

From selected sub-mountainous vineyards in the area “Ai-Giorgis” part of the privately owned vineyard of Domaine Hatzimichalis in Atalanti Valley. At an altitude of about 250 meters (820 feet) above sea level, we cultivate the following three exceptional varieties; Assyrtiko, Malagousia, and Chardonnay.

Nose
Distinctive aromas of glazed fruits, nuts, cut wood and vanilla as well as some primary fruits such as peach, apricot and apple.
Palate
High complexity on the mouth, as we meet all the aromas of the nose, spices and many white stone fruits. Full body, creamy texture, high acidity and long finish. The intensity of flavours in this wine makes it delightful.
