Cava Dryos Red
Wine Varieties
To be classified as “Cava” for a red wine, it has to be aged at least 3 years of which 12 months in oak and 12 in the bottle. For our Cava Dryos we choose to age it for 18 months in French oak barriques, followed by another 18 months in the bottle.
The specific, tender care with which we provide these varieties results in a beautiful, concentrated taste.

Classic red vinification method. The wine ages for at least 18 months in 228lt French oak barriques and for another 18 months in the bottle, in our underground cellars, under controlled temperature.

From selected sub-mountainous privately owned vineyards of Domaine Hatzimichalis, in the area of “Ai-Giorgis”, on the outskirts of mount Knimis. At an altitude of 350 meters (1,150 feet) above sea level, we cultivate the specific Cabernet Sauvignon, Merlot, and Xinomavro, which come together to create our Cava Dryos Red. No irrigation systems are used at this vineyard in order to increase concentration and flavor.

Nose
Unique pronounced aromas of black and red fruits, mostly berries, plums and dried fruits . Spices are also evident such as cloves, cinnamon, as well as hints of leather.
Palate
On the palate we also sense hints of coffee and raisins. Full body, soft tannins, intense flavour but also balanced and long aftertaste. All contribute to a special wine.
Best served at 15- 18ºC
